Aungy’s Roasted Chicken

Made this lovely creation today! Couldn’t get the best picture because of poor lighting in my kitchen and I cut the chicken in half before I remembered to take a picture šŸ˜¦

This roast chicken recipe is super simple with only a few ingredients. Here’s what I used:

  • sprinkle of Sea salt
  • sprinkle of Black pepper
  • sprinkle of Ground thyme
  • 1/4 cup Butter
  • 4 small Potatoes
  • 2 Whole cloves of garlic

When you get your chicken rinse it off with some water to get rid of any of the blood it may have been sitting in, wipe it down afterwards with some paper towel. Take the spices (salt, pepper and thyme) and rub the bird down in them. Take your potatoes and cut them up into wedges place them in the bottom of the pan/ deep bakeware that your using. Do the same with the garlic, put one on each side of the chicken (you could also place one inside the chicken if you wanted to). Once that’s done take the butter chop it up into 4 pieces. Stick one cube in the following sections: tucked between both wings, inside the chicken and place one on top of the chicken (on the breast). Set the oven to 400 and put the chicken in to bake for about an hour or until the internal temperature reaches about 192. I put the oven on broil for a couple minutes towards the end just to give the skin a nice crispy brown colour. I love eating the crispy skin so if your in the same boat then I highly suggest doing that step. I didn’t preheat my oven because I used a glass bakeware set and as you know if there’s extreme temperature change it will shatter all over the place…can’t tell you how paranoid I get when I use it!

Can’t tell you how well this turned out, my boyfriend ate it sooo quick! Not to mention the potatoes were just bursting with amazing flavor! You may want to add more potato then I used, wish I made more with ours. Hope you guys enjoy!
