I’ve been wanting to make a lasagna from scratch for a while now and since I got an amazing bakeware dish for Christmas it gave me that extra push to finally do it! No excuses!
I used a bunch of things that I already had sitting around at home. Such as the ground chicken ( I’ve had a couple sitting in the freezer for a while now), the lasagna noodles and various produce. This amazingly delicious meal was a product of all that! Here are the ingredients I used for this lasagna!
- 1 small head of cauliflower (2 cups), diced finely.
- 2 small onions, diced.
- 6 small cloves of garlic, diced finely.
- 2 cups parsley, diced.
- 1 1/2 cup white mushroom, diced.
- shredded cheddar cheese (use at your discretion).
- 2 containers Ricotta cheese.
- 1/2 cup spinach.
- 2 packs ground chicken.
- 1 1/2 jars of Classico tomato sauce.
- 1 box oven ready lasagna noodles.
- salt and pepper.
Alrighty and now the directions! This will go quicker if you prep all your veggies ahead of time!
As the meat is browning away, grab a mixing bowl and empty the two containers of ricotta cheese. Add the ricotta cheese, diced cauliflower and a dash of salt. Give it a good mix until everything stirred in well. Set that aside, that is ready for construction stage.
once the ground meat is thoroughly cooked, add in the: onions, garlic, parsley and mushrooms. Add a dash of salt and pepper. Cook until veggies are soft or looks like this!
Turn the stove off and let it sit! It is ready for construction stage. Grab your deep bakeware, I used this nice glass one that I got for Christmas. Add a generous amount of tomato sauce to the bottom, this will prevent things from sticking to the bottom and the noodles cooking through.
Add your noodles, I had to break them to fit them into the dish Then add tomato sauce ontop (noodles need moisture to cook). I then added a layer of the meat mixture, make sure it is all even. Then sprinkle with shredded cheese, should look something like this!
Add another layer of noodles and tomato sauce, this time add your ricotta cheese mixture. Smooth it all out and make sure it is all even. Sprinkle with some shredded cheese and add another layer of noodles. Add tomato sauce, make sure it is a generous amount..this was my last layer because I was running out of room. Add whatever is left of your meat mixture and sprinkle whats left of the ricotta and shredded cheese. I chose to add some thin slices of cheddar to the top, I like it cheesy.
I got a big cookie baking sheet and lined it with aluminium paper, stick that under the shelf your going to use just in case some of it spills over. Stick your lasagna in the oven and set it to 400 degrees. Let it bake for 45 minutes uncovered! Here is what it will look like!
This does make a lot, definitely too much for just two people. This would be good for a big family dinner, just a warning it is a heavy meal. Hope you guys like it!
