I had a little sweet tooth tonight, with a little brainstorming I got the idea of making matcha banana muffins. I played around with the recipe until I found the right consistency for the batter. I also played around with toppings! you’ll see them topped with shredded coconut, chopped pecans and fresh blackberries.
Here are the ingredients I used to make these cute muffins.
- 2 Ripe bananas
- 2 Eggs
- 1 1/2 Cup all purpose flour
- 1 Tsp Baking powder
- 1 Tsp Baking soda
- 1/2 Tsp salt
- 1 Tsp vanilla extract
- 3/4 Cup white sugar
- 1/3 Cup melted butter
- 1 Tsp matcha
You will get 12 small muffins if you follow this recipe, here are the instructions.
In a big bowl mash up the two bananas, don’t leave any big chunks. Then crack the two eggs directly on the banana and give the mixture a good stir. Add in the vanilla extract, baking powder, baking soda and the sugar.
In a separate microwave safe dish, microwave the butter for 50 seconds until melted. Set it aside and let it cool a bit before adding to the mixture. Then proceed with adding in the flour and the matcha. If you want it to be more green then add more matcha.
Preheat your oven to 350 degrees. As you wait for it to heat up, line the muffin tin with muffin cups. I used a tablespoon and put two spoonfuls in each muffin liner/cup. Top it with whatever you like, it should look something like this.
Once your oven is heated to 350, bake them for about 20-25 minutes. Keep an eye on them, the tops should be a golden colour and they will split a bit on the top. If your unsure, take a toothpick and insert it directly in the middle. When you pull it out and there’s batter on the toothpick it needs more time. If you pull out the toothpick and there’s no batter on it, then they are done. Let them cool a bit before eating them 🙂
