Walking down the frozen isle of the grocery store I saw a frozen vegetarian burrito bowl for sale. I challenged myself today to recreate it using fresh ingredients! This is the best vegetarian meal I have had in a long time. You can easily make it vegan as well, just substitute the extra old cheddar with vegan cheese. The sausage used in this recipe is actually vegan too! I was surprised to find that once you mix it with taco seasoning, it tastes like actual real meat. Here are the ingredients for this amazing burrito bowl.
- 1 Pack Field Roast Company vegan Mexican chipotle sausage
- 1 Can black beans
- Pickled jalapeno (topping)
- Ripe vine tomato, diced (topping)
- Avocado, diced (topping)
- extra old aged cheddar, shredded (topping)
- 1/2 cup uncooked rice (equals enough for one serving)
- 1 Pack Frontera Texas taco skillet sauce
- green onion (topping)
I simply took the sausage and put it in the oven on 400 for about 15-20 minutes. Take them out and in a sauce pan, crumble the sausages up into small pieces. Add in your can of black beans and taco sauce. As you wait for that to warm up, cook your rice (I used instant rice since I was starving and wanted a quick meal). Once the rice is done throw it in a soup bowl (something deep) and add the sausage mixture.
Top with your favourite toppings! I used a vine tomato, avocado, green onion, extra old aged cheddar, and jalapeno’s. Put as much or as little of whichever topping you enjoy! Just a warning if you use the same sausage, it is spicy itself so unless you like super spicy food I wouldn’t suggest adding the jalapeno. You can even top it with a dollop of sour cream but again if you’d like this to be vegan just use vegan cheese instead.
This was the yummiest vegetarian dish that I’ve created by far. If you’ve just switched to a vegetarian diet, then this will help you on the days when your missing meat. You cannot taste the difference!
