Hearty Vegetable Soup

I was in the mood for a nice healthy vegetable soup so I created this! It’s super good for you and filling. It is 100% vegetarian and great for anyone trying to shed some weight. This recipe took about an hour to make and can serve up to 4 people. Here are the ingredients I used:

  • I Carton of Campbell’s Vegetable stock
  • 3 Cups of water
  • 1 Onion, diced
  • 1 Clove garlic, finely chopped
  • splash of vegetable oil
  • 1 Head Broccoli, chopped into small pieces
  • 1 Red pepper, diced
  • 4 Stalks of celery, diced
  • 1/2 Cup white mushrooms
  • 1 Tablespoon Cilantro, chopped
  • 4 Mini potatoes, peeled and chop into small pieces
  • 3 Cups fine dry egg noodles
  • Dash of salt (to taste)
  • Dash of black pepper (to taste)
  • Dash of red chilli flakes
  • Dash of Paprika
  • Dash of dried Parsley flakes

Start off by grabbing a deep soup pot, splash some vegetable oil. On medium heat, brown the onions and garlic. Once they look nice add the vegetable stock and water.

Chop up all your veggies as the broth warms up, you can add them in as soon as you chop them too. Add in all the seasonings and let it come to a boil. As soon as the veggies are tender, add in the egg noodles. Let it simmer until the noodles are fully cooked and there you have it. A simple yet delicious soup!
