Easy To Make Oatmeal Cookies

I had a sweet tooth today so I decided to make quick and easy oatmeal cookies. You can probably make this recipe vegan if you substitute the egg with a ripe banana. They take about 10-12 minutes to bake (depending on the size you make them). Here are the ingredients I used.

  • 1 Egg
  • 1 Tsp vanilla extract
  • 1/2 Cup vegan butter
  • 1/2 Cup brown sugar
  • 1/2 Tsp baking soda
  • 1 Cup all purpose flour
  • 1/2 Tsp cinnamon
  • 1 1/2 Cup rolled oats
  • 1/4 Cup granulated sugar
  • 1/4 Tsp salt
  • 1/4 Tsp ground cloves

  1. Preheat your oven to 350F. Grab a medium size bowl and a hand mixer. Add the butter ( easier to mix when softened), brown sugar, granulated sugar, egg and vanilla extract. Mix until smooth consistency, make sure the butter is incorporated well and that there’s no chunks.
  2. Add the flour, rolled oats, baking soda, salt, cinnamon, and ground cloves. Make sure your mixer is on low when adding the dry ingredients. Mix well.
  3. Line a baking sheet with parchment paper and use a tablespoon as a scooper for the batter. Roll them into balls (the cookies will look nicer once their baked), set them on the baking sheet and squish them down a bit. They don’t expand that bad so you can space them together more. Throw them in the oven for about 10-15 minutes. I got about 18 cookies out of this batch.
