What I Ate For Breakfast

Morning readers! Thought I’d give you all a little glimpse of what I had for breakfast. It’s super simple to make and is delicious. I’ve been obsessed with these high fiber parfaits!

If you’d like to know how to make it, then here’s what I used.

  • Red River Hot Cereal
  • Liberte Mediterranean yogurt in Caramel flavor
  • 1 Peach
  • 1 Banana
  • 1 Frozen strawberry
  • 1 Tsp brown sugar

You can use any fruit you have, it doesn’t have to be peach and banana. I made one yesterday with fresh raspberries and it was amazing!




Now how to make it! For the Red River I just followed the directions on the box, so add 1/4 cup of it along with 1 Cup of water to a small pot. Let it come to a boil, add in the strawberry and brown sugar. I mash up the strawberry once it gets soft, I just like the flavor of it. You want the water to be non existent, it will look similar to oatmeal. Then take it off the heat and cover it for a couple minutes. Once it’s ready it should look like this.


I know it doesn’t look too appetizing but you’ll change your mind after we add the toppings!

Now grab the yogurt and add a couple teaspoons of it to the top, smooth it out a bit. I then took a peach and chopped it up into small pieces. Here’s what it should look like.


I wanted a little more fruit so I decided to add a chopped up banana on there as well.


I of course can’t go without coffee in the morning so I had to make one. I’m not sure if I showed you guys my fave alternative for milk/cream that I add to my morning coffee.


The So Nice French Vanilla soy creamer is hands down one of my favourites that I stock up on. I always have two of them in my fridge. For anyone that is vegan or lactose free you have to try this! I promise you won’t be dissapointed!
